Everything is clear and simple: I chose a plan, bought an e-SIM, activated it using the button in the app (iOS 17.7), and the e-SIM was automatically added. I only had to click "data roaming" in the settings, and the internet was working as soon as I landed in Italy. It's all very easy, I highly recommend it.
