Just a 5 minute drive from St. Rémy, Philippe has created a magical entrance to his cooking class area through a labyrinth of paths wending through the most extensive rose garden I could imagine, accented by his own sculptural creations throughout. Then you arrive at the ‘mas’ and the adjacent dining area and simple working kitchen, opening to a large terrace and pool area. Philippe is indeed passionate about Mediterranean cuisine and gives a charming master class in the preparation of indescribably delicious yet simple dishes of local vegetables. He and his amiable sous-chef Gemma seemingly effortlessly produce a feast, inviting guests (in this case just my wife and me) to participate as we wanted. The conversation is easy and, beyond discussing the food prep and ingredients, ranged from Philippe’s impressive restaurant background to his passions for the simple and vigorous life, to Provence. I wish we’d been a large group to finish Philippe’s and Gemma’s delicious production. As it was, we took what leftovers we reasonably could, and left with deep appreciation for Philippe’s craft, newfound culinary skills (or aspirations), and an enduring, cherished memory of the afternoon at Mas des Figues.
